Banh can cake
Banh can are small rice cakes
cooked in clay dishes over a pot of hot
coals. The dish is all about texture -
a crispy, crunchy rice exterior shell, a
smooth creamy rice-paste interior, and
in the middle of the small cakes, a hid-
den layer fluffy, whipped quail egg.
The rice cakes themselves are an
absolutely wonderful texture experi-
ence, but they have little flavour - that’s
where the sauces come in. The dish
is mouthwatering when dipped into a
sauce called mam nem made of special
fish sauce, chopped green onions and
ground red chili.
My favourite spot is at 52 To Hien
Thanh street, just 10 minutes walking
from the beach where diners can watch
the cook skillfully pouring flour into
moulds.
Nem nuong
Of all the Nha Trang cuisine, I defi-
nitely cannot neglect grilled fermented
pork rolls, also known as Ninh Hoa or
Nha Trang. I love both fermented pork
roll fresh (nem chua) or the grilled vari-
ant (nem nuong).
Nem nuong look a bit like western
sausages or klobasa, but they are grilled
directly over the fire of coal brazier. The
fermented pork rolls are served with
raw herbs as well as dipping sauce with
pickled green papaya. Nem Nuong Vu
Thanh An at 15 Le Loi street is the most
crowded restaurant in town from late
afternoon till midnight.
Tamarind squid
This is a unique snack of Nha Trang.
Dried squid is fried in tamarind sauce to
create a special salty, sweet and chili
dish.
Muc rim me
is packed in plastic
bags and sold on all corners of the city,
but the best is found in Dam Market.
Mango cake
This cake is made from ripe man-
goes and a little sugar. There are plenty
of sweet mangoes in Khanh Hoa so
people make cakes that can be pre-
served for a long time, beyond mango
season. The cake tastes sour, sweet and
is extremely aromatic. It is sold mainly
in Dam market.
