400 grams of Pork
500 grams of raw artichoke flower
2.5 liters of pork bone broth
50 grams of shallots
50 ml soybean oil
30 grams of spring onions
fish sauce
lemon juice

Wash the pork leg and then cut into pieces and
season with a little salt and pepper.

Wash the artichoke flower in water with lemon
juice. Cut it into pieces and remove the heart
in the bottom. Soak the artichoke flower with
water and lemon juice.

Prepare the pork broth by cooking pork bones for
two hours to get the natural sweetness.

After the pork has marinated with spices, fry it
in hot oil in the soup pot, wait until the meat is
lightly browned then add chopped shallot.

Pour in the stock and cook at medium heat.
When it is boiling, skim it, then lower the heat
and cook for 60 minutes more. Meanwhile, boil
the water with salt and blanch the artichoke
flower. Take out the artichoke and add it to the
pork leg. Cook it for 30 minutes more or until
tender. Season to taste and enjoy.
