sauce is to Vietnamese cooking what
soy sauce is to Chinese.
The Vietnamese use bottle seals
to indicate quality, the highest being
nuoc mam nhi, the first extraction
of liquid from fish fermented in salt.

brand has been honoured by the Viet-
nam Records Book Center for its 584
Nha Trang fish sauce.
Nha Trang has long been famous
for its high quality anchovies, the main
ingredient in fish sauce, and provides
tens of millions of litres of fish sauce
to domestic and international markets.
Figures show that, every year, fish sauce
producers in Nha Trang produce more
than 20 million litres and use about
15,000 tons of anchovies.
