paya and dragon fruit all grow organically
under close control. Each also has a herb
garden with countless varieties including
basil, sweet mint, green and red perrila.
Following this trend, La Residence
Hue Hotel has taken advantage of the
land behind it to make a beautiful gar-
den right on the bank of the Huong
River. It includes 10 kinds of vegetables,
18 kinds of herbs and eight kinds of
tropical fruit tree.
Ana Mandara Villas Dalat, Bai Tram
Hideaway and Hyatt Regency Danang
are others who apply this model in
their resorts.
Livestock is also farmed at some.
Sandhill Resort and Spa in Phan Thiet
raises cross-bred wild pigs, while Bai Tram
Hideaway Resort in Phu Yen rears pigs,
cow, chicken, rabbits, goose and goats.
MAKING THE DIFFERENCE
“Sometimes the difference be-
tween an organic a non-organic prod-
uct is very minimal but the feeling that
you are consuming organic products
gives an overall happy internal feeling
and it is a fact that happy people live
generally a better quality and longer
life. The feeling of being able to eat or
drink something without the fear that
it may cause immediate or a long term
health problems is a nice feeling,” said
John Berry, a 45 year old American who
spent his vacation in one of Vietnam’s
luxury resorts.
Berry also took a tour around Hanoi’s
local market: “The food there looked
fresh and rich. I just wanted to visit and
see how people live here, but I would
not choose to eat the produce without
knowing about its quality and origin.”
he added that the feeling of contrib-
uting to the environmental protection
also set him up well to enjoy a meal.
Vegetable gardens not only bring a
source of healthy food, but also improve
the landscape around the resorts. The
cooking tours in which guests are usu-
ally taken to the market to prepare ingre-
dients can now be replaced by a tour of
the beautiful gardens. Guests will hear
about how people grow and take care of
the crops and prepare meals from newly
picked greens in the way that keeps their
flavour and nutrition intact.
At Hyatt Regency Danang Resort &
Spa, the farming is all done by people
with disabilities from the Thanh Tam
Vocational Training Center. Enjoying
the fresh and safe food at the resort is
therefore also a way to contribute to a
worthwhile community project.
At the Sandhill Beach Resort & Spa,
tourists like to visit the pig raising area
where they can see how the wild pigs
are bred and the rural life of the farmers
and they can also choose a specific pig
for their meal.
